Fifthfiend is neither a Final Fantasy summon monster nor a Final Fantasy recurring enemy, but I'll do my best! *cracks knuckles*
As he rides a red horse, the belly opens up and wheels come forth, one dropping down at the tail end, the other flipping out and attaching via double rods under the horse's chin. The front legs twist forward and fold back, leaving guns at the knees and the hooves turning outward to serve as pedals. The back legs twist back and the lower halves come off, leaving tailpipes. The removed halves reattach on the halter's connections to become handlebars. The horse opens its mouth to reveal a headlight. Fifth then either invites you on if he likes you or if you pay him enough, much like Yojimbo, or shouts "SO LONG, SUCKERS!" and speeds off on his bitchin' motorcycle.

I was always rather nonplussed by squeenixes' inability to integrate a wider cultural perspective into the Final Fantasy series.
I mean I can't be the only one who's been dying to see a "Summon Los Angeles Lakers" spell right?

You haven't kept up with FF13, I take it. S'okay. Here: http://finalfantasy.wikia.com/wiki/Gestalt_Mode#Summoned_in_Battle

They take things from myth and legend. The Lakers are neither mythical nor legendary.

Tonberry.
His head tilts up and his knife attaches to his nose. Spikes spiral down to form a rough drill. As his robe is a single unit with his body due to being mechanical, his roughly conical form flips down and one of the folds serves as a saddle. His arms simultaneously move into position and serve as treads. His feet tilt under, and due to their round form, serve as wheels. The tail arches up and the lantern depends from it behind and above the player.
Enjoy your tonberry digging machine. ;)
Magic Pot
Magic pot finally reveals his body by climbing out of his jar. His arms hold the pot above him as he lies back and the wheels on his shoulders hit the ground. He has wheels for feet as well, and his legs fuse together and bend back to provide a short wall (you don't live in a pot and not have stubby legs). A console pops out of his upper legs and his head comes forward, with his ears sliding around his head and folding down along with his nose to provide a seat.
You now have a cannon Jeep.

You want a vehicle to turn into a vehicle, a different vehicle to turn into a vehicle, or male fanservice 6.5 times greater than Shiva? XD
Fine. Mog lets you on Choco. You are now riding it as you would a chocobo.
Eden beams you up to the bridge. You are now controlling it from orbit.
After several minutes of unnecessary and slightly uncomfortable-to-watch twisting and turning around each other, the knights are all fused in pairs into six pillars with Arthur in the middle of them all, and he bends down to let you up. You now have an Alexander fortress rip-off.

Gilgamesh, Cactuar, Siren, Cait Sith and Diablos.
New rule, limit one request per post.
But because we're best buds (and because I want to do Cait Sith), I'll give you two.
Cait Sith: To make up for writing the stuffed moogle out of Compilation of FF7, a more mechanical version falls from the sky and rebounds, sweeping Cait Sith up in a goofy shot. Cait then whacks a button on its head, making it bend over and treads come out of its feet and arms. Cait's cape forms into a shovel as he clings to the top of the moogle's head. The zippered portion of the moogle opens up to reveal a seat.
You now have a bulldozer.
Gilgamesh: See Hecatoncheir. :P

Ultros/Chupon combined form
Chupon's back-end underbite retracts all its fangs and becomes a seat. Chupon grabs Ultros up with its arms. You are now effectively riding a floating Portuguese Man 'o War (http://en.wikipedia.org/wiki/Portuguese_Man_o%27_War).
Edit: Or if you prefer, it uses Ultros' tentacles to climb around, making it more of a land strider of sorts.

How about an Imp.
Or GARLAND (FF1 version)
I'm whipping out my "right to decline" card on the Imp. It's not a summon (that's actually Goblin) and it's just too small and skinny to really make anything out of.
While I'd LOVE to do Garland, I'm afraid he's just too similar to Odin (FF13) to do anything significantly different with. It would, however, be totally badass for a redeco.
Dancing. Girl.
Everyone knows that the Dancing Girl only appears in a summon sequence along with Bomb, so DG&B follow as thus: DG rises into the air on her back, while Bomb flies around her. Her feet attach to Bomb's back and Bomb's arms sweep backwards for handle bars. The player (that's you) hops onto DG and she sits up and wraps her arms around you.
Congratulations on your very simple, but also very safe and very endearing hover scooter. ^_^

Stealing this one: Kefka sticks his thumb in his mouth, blows, inflates himself into a giant Macy's Day balloon of himself which you ride by dangling from the end of a long, flimsy string; also he spits fire and fires orphan-seeking missiles out of his giant balloony eyes.

Well, I know the sprite used there is the mechanoid behemoth version, but you can have an ordinary behemoth any day. Plus the FF8 version (http://finalfantasy.wikia.com/wiki/File:Ultimaweapon8.jpg) looks way cooler and is more in line with what they've done with it in recent games.
So...
UW's upper torso flips down and its head, wings and arms form a front bumper as its torso recesses into the main frame. Its legs curl up into wheels. The sword's handle locks into its mouth and the blade splits in half and rotates to run along the front of either side of the bumper as a cutting edge. The body recesses into a seat for you and you jump in. The tail arches over you and splits into several sections, forming a roll cage.
You now have a bitchin' black, bladed-bumpered sports car. :D

As boring as this may sound to you, I like the idea of the head opening up and the player jumping in to control it as a giant doom mech. ^_^;
Alternatively, it drops flat on its back and the player hops into its mouth. Its limbs all spread into a =|= formation with the player at the front, where the three quills at the top now act as machine guns.
I dub this the "Doom Buggy."
Land Worm.
That really couldn't be anything other than a train. And it kind of already crawls around, so the most interesting transition is for it to lie down, maybe have some spots on the sides drop down to become wheels, and maybe grow a smoke stack. :sweatdrop

Diablos!
Diablos goes much the same way as Bahamut, only instead of a dragon, he looks more like a bat. His legs fold back over themselves and the armor on them forms something resembling a bat face. His feet become a seat. His wings, unlike Bahamut's, actually have to do some moving, so they pivot around a central point and then move between the crook of his legs. His neck recesses until his face is basically flush with his shoulders and his arms and hands become the bat's legs and feet.
You now feel like Ozzie! d:Db

Lamia? Or Omega Weapon?
Omega Weapon is either a recolor of Ultima Weapon (sans sword in FF8's case) or a giant spider robot, which are respectively already accounted for and basically not in need of a Gestalt.
Lamia I can work with. She curls herself into a wheel with her torso on the inside. Her tail tip is built to flatten into where it meets with itself by pushing everything a notch in under where her human form meets her snake form. This frees up the works into an outer and inner section. The player hops aboard her torso and her arms lock over the player's legs to part of her inner ring for safety. A pair of handle bars comes out of the front of the inner ring to steer and then both the outer and inner rings split down the middle and spread maybe 6-10 inches for visibility purposes. Not a perfect solution, but it also improves stability a bit while leaving room for leaning turns as well as independent movement for spinning in place and variable speed turning.
Lamia has evolved to Monocycle.

Moogle Summon (FFtactics/Dissidia)
Making me work here, eh?
Alright, but you're going to have to forgive me for needing to scale it up a bit. (I've been doing this for a lot of them anyway, but just to be clear on it.)
Moogle's wings rotate up to behind his head. His head tilts forward and twists around so it's facing up. Wheels extend out of his legs and back and his arms simply fold to the sides like fuel tanks on a semi.
You are now driving a combined truck and flatbed with some wicked pincers on the front.
Alternatively, treads come out of his back and his arms and legs pop off and mount where the sun don't shine. His head tilts up into a truck cabin and his poof and antenna come off and attach to the end of his arm-and-leg construct.
You are now the proud owner of a Moogle wrecking ball crane.
Why has nobody said Ifrit yet? Blues do Ifrit!
Operating under his more recent bestial appearance, his thighs fold into the cavity of his abdomen and his knees bend until his shins are nestled into them. His long feet fold up into that and his toes curl up to form skids. His head and horns tilt back and connect flush with his back to form a groove for the pilot area. The fur on his arms is already much like a circular saw and so he grabs his own shoulders and puts those into the ground with the serrations going backwards for traction.
You now have a fire cannon death tank of some sort. There's no real-world parallel, but that's just because the real world can't handle something that metal. Tear it up! ;)
