Unless they had a silver or magic blade they wouldn't be able to cut-through her bone. Liz has a knife though, so maybe it's a silver/magic knife.

Besides, Kit's leg is visible :P ..it's.. well, right where it should be. (as Krylo pointed out)

EDIT: Also, now that I think about it... I don't know if someone would want to eat a demon's flesh. It might drive them crazy or something. Or maybe it's like an XTREMEDUDEZHARDK0R3 narcotic. Might be something worth thinking about in regards to the story... Like demon-flesh addicted zombies or whatever. Megazombies. Uberbies. Ultraghouls?

Who all lost their teeth in life, and hence have silver teeth.

So soon after page 46 there is Page 47!

Something tells me Liz ain't shootin' straight. Hopefully she can rely on Kit's short attention span + the current situation to avoid being drilled by anymore questions...
