The anticlimax part comes in when they're fighting Ur and everyone expects another tough 20 episode battle with a dramatic resolution precisely because the first two Fiend fights were like that, and then it's over in half the time because Red Mage had a lame idea. You're right though, there are a lot of genuinely climactic events, it's just that a lot of the time they serve to set up the anticlimactic ones somehow.
