Hit upon a killer way to do pulled pork in the crock pot for me.

1) Combine 1 tablespoon of the brown sugar, the paprika, mustard, ginger, salt and pepper in a bowl. Rub onto surface of pork roast.
2) Add remaining 2 tablespoons of brown sugar to crock pot, along with vinegar and 2 cups water. Whisk to dissolve brown sugar, then add roast.
3) Cook on high setting ~5-6 hrs or low ~8-9 hrs.
4) Remove pork and transfer to cutting surface. Chop roast into large chunks.
5) Strain crock pot liquid into saucepan. Bring liquid to boil and reduce to around 1/2 volume.
6) Return roast to crock pot, adding 1 cup of reduced cooking liquid and 1 cup of barbecue sauce. Fully shred pork with two forks, mixing sauce well. Let sit ~30 min - 1hr on low.
Serve on hamburger buns or other sandwich rolls.
