Unless they had a silver or magic blade they wouldn't be able to cut-through her bone. Liz has a knife though, so maybe it's a silver/magic knife.
Besides, Kit's leg is visible :P ..it's.. well, right where it should be. (as Krylo pointed out) EDIT: Also, now that I think about it... I don't know if someone would want to eat a demon's flesh. It might drive them crazy or something. Or maybe it's like an XTREMEDUDEZHARDK0R3 narcotic. Might be something worth thinking about in regards to the story... Like demon-flesh addicted zombies or whatever. Megazombies. Uberbies. Ultraghouls?
