Things being said, I suggest a RE style zombie virus to be the reason.

Every time I have to use a zombie without having magic, I make them a mistake in a military experiment, and similarly do a lot of the people who are in need of zombies.

This also leaves a window for your "Professor" who can just happen to be partially affected and other superhuman who are succesful results of the said experiment.

I think the whole idea of the professor is that he was infected on Z-day, basically one of the first. Since zombies in this get smarter as they grow older... he's a genius zombie for being so ancient in zombie terms.

Okay, I'll argue this in the order your problems came up, TDK:

1: How do you get smarter without amazing powers of regeneration? You learn. I didn't mean that a ten year old zombie will know more than it did before it was turned just by virtue of its age, it can just access more of what it already knew.

2: Gangrene was an example. There are countless infections that, left unchecked can trash your brain.

3: Finally, I'm using the propane tanks as an example, yet again. But yeah, there's a lot of suspension of disbelief. Zombies are my prime example.

And finally, about the Professor and the zombie virus. The virus was based off of both the RE virus and some conjecture between myself and one of my friends. The basic run of our conjecture was that if a corpse sets up rigor mortis prior to reanimation, it will have to either lie still until rigor wears off, or break every joint it moves and risk near paralysis. A person who turns from a bite, but doesn't die from bloodloss first will recover their knowledge much more rapidly than someone who died before turning, and will regain full use of their limbs more rapidly, since very few cells are killed in the process of turning a living body than there are cells dying from oxygen depravation as a corpse. Again, I'm not explaining it well, but the basic idea is that zombies don't regenerate, but they do reanimate dead cells, so while your brain may be completely dead before reanimation, the cells can be brought back to life.

Cellular division is slow, since otherwise zombies would be insanely huge, what with no cells dying. A disembodied zombie hand is still alive, but it has no commands coming from the brain, so it'll never move again, but I'm not quite sure how fast it'd rot. I think that makes sense. Complain if it doesn't.

Two things. First, what do the zombies look like? Is it clear whether the person is a zombie or human? Is there an odor? Do zombies have some sixth sense that allows them to find live humans?

Second is I wanted to take a commander role if that was ok with everyone. I pride myself on being a strategist and would like to pit my brain against the NPC's

Well, some zombies will have an odor, but most won't. And there won't be flashing lights and sirens going off over every zombie's head, but, yeah, it'll be fairly clear if they're a zombie. Mostly, though, the visible differences in zombies and people will be in demeanor. Zombies will be aggressive, violent, incapable of human speech, and, the chief visible changes, the virus will cause a zombie's eyes to leak blood and may cause veins and capillaries close to the skin to blacken, while the skin will become more transparent, leading to a veined, sick appearance.

Oh, and, if everyone's okay with it, Aero, you can be Big Boss Aerozord.

A question I would have is what's our Caravans purpose?

Are we simply trying to find somewhere safe, or have we taken an offensive stance, moving from town to town eliminating the Zombie threat as it comes?

And at that, if we're taking up roles in a serious manner, is it possible for me to be some sort of Scout? Lightly armed, sneaky and moving ahead of the group to check on whats out there?

Well, the basic idea of the caravan is survival. See, where there's a person, a zombie will soon follow, and where there's one zombie, there's a thousand less than half a mile away, so we have to either risk stopping to fortify a post, or keep moving in the hopes we'll find a fortified town with enough supplies to sustain us, and enough room for us all to live. If we find a zombie in the middle of the road, we don't slow down for him, but we won't go out of our way to find zombies.

Second, yes, you can be a scout, but remember, you're in a car, so you don't have to be lightly armed. That said, let me reiterate to everyone: Innovation is king. Imagination is your god.

ultimately we will need to be offensive. Their numbers increase as ours decrease. You do not take up a purely defensive stance against an unrelenting enemy with continual reinforcements

Allow me to poke my head in here, and express interest in addition to a plan.
first of all you are all familar with the fact that during WW 2 the army reuqested that all fat, or grease be turned in to make glcyerin by extracting it from the fat/grease to make bombs. Now there are other componets which are required in making a effective "stable" bomb. Namely nitrates. Now nitrates are a common component in your modern day fertilizer, and can be safely extracted with a small bunsen burner, and a small dust mask that can be picked up at any construction site, as for detonating it we can take the alarm mechanism in a modern alarm clock to create a timer, or if we are really lazy a small bit of twine will serve as a readily lightable fuse. all of these things are readily aviable, and not likely to be taken in the case of a zombuie apoc. People don't value the bacon grease, or french fry fat that is left at a Fast food resutrant, and I highly doubt that the local Lowes will have been ran sacked for anything but its wood, and fencing materials. This allows us to have bombs that can redily take out a city block without great risk in raiding a millitary compound.
so, yeah.
