No George Harrison? Even with the recent Beatles thread, nobody has thought to mention George Harrison?
Seriously, he's probably the most technically proficient of the Fab Four (even if it took until after the breakup for his skills to fully mature). Go and listen to All Things Must Pass, or his self-titled album, or Cloud Nine, or Brainwashed (which was released after he died--Jeff Lynne and his son Dhani finished it). The man had talent--and more importantly, he worked quite hard to constantly improve himself.

Buckethead. Partially because he's a wierd mother fucker, but mostly cause he's good at shredding in the no-melody sorta way.
Herman Li's also fucking dynamite. If you didn't recognize the name, how about the "What the fuck that can't be possible" guitarist from Dragonforce. I don't know if he's in a band right now, but Lee Kyong Wong is my current favorite, if only because he does Ken's SFII theme song, The Black Mages, Dynasty Warriors, and in his best video yet, Guilty Gear XX. The dude gets bonus points for the fucking amazing video game music alone. EDIT: Metal music makes me say "Fucking" alot.

I forget his name but I always really liked the guitarist from the Deftones. I thought he did a lot of interesting things. The crunchy-downtuned guitars thing has definitely gotten to be a bit of a cliche but they were doing it before everyone else was and always took it in some very non-cliche directions.
Also whoever is the guitarist from Queens of the Stone Age cause that band just blows your ears off with every song.
